Ingredients and Prep

shrimp (medium size) 2 lbs shelled and deveined, placed in a container/bag for marinading
olive oil 1/3 cup marinade - measured and placed in blender
garlic 2 large cloves marinade - peeled and placed in blender
fresh jalapeno 1 pepper marinade - rough chopped and placed in blender
brown sugar 2 tsp marinade - measured and placed in blender
paprika (smoked preferred) 1 tsp marinade - measured and placed in blender
chili powder 1 tsp marinade - measured and placed in blender
onion powder 1 tsp marinade - measured and placed in blender
cumin 1 tsp marinade - measured and placed in blender
salt 1 tsp marinade - measured and placed in blender
black pepper 1 tsp marinade - measured and placed in blender
tequila 2 tbsp marinade - measured and placed in blender

Cooking Instructions

Step 1 Make the marinade by blending all marinade ingredients. It should be quite easy to pour. Add water if the mixture doesn't pour easily.

Step 2 Place the shrimp and marinade into a large container or large bag. Mix well to ensure the shrimp are fully covered.

Step 3 Cook the shrimp over medium high heat. You can cook in a pan on a stove, directly on a plancha, or put the shrimp on skewers and cook over a charcoal grill. Watch the shrimp closely and be careful not to overcook. They should curl partially, but not completely into themselves. If they curl up tightly, you've cooked too long.

Step 4 Pull the shrimp off of the stove/plancha/grill. If the shrimp are large and you plan to serve in tacos or tostadas, you may want to roughly chop them.

To Serve Serve in fresh, high quality corn or flour tortillas that have been warmed on a flat top them allowed to steam for a few minutes in a tortilla warmer. Top with some pico de gallo and thinly shredded cabbage. A thin slice of avocado, a dollop of guacamole, or a drizzle of crema is nice as well. Don't forget to serve with lime wedges!

This shrimp recipe is very versatile. Its very simple to make and the cooking can be done in a number of ways - just be sure not to overcook the shrimp! I've used it for shirmp skewers served with a cilantro lime dipping sauce, in tacos, on tostadas, and even as a topping for chips (try it!!) I hop you enjoy!

Note: The tequila can be replaced with water or stock if you prefer. Keep in mind that the alcohol completely cooks off, so its perfectly fine to serve to children.
